I don't know how much of it was luck. Richard earlier mentioned how running a restaurant is about managing mistakes (or something like that). He also mentioned that part of the job of the front of the house person was getting feedback to how the food was being received. Maybe Spike was better at that than others, but I think he would have had whoever his front of the house person was trying to do the same thing.

And a lot of it sounded like the difference might have been the oyster wither creme freche pearls.

Another thing to consider is that it looks like both judges with the bad dessert voted for Richard, since it sounded like Gail voted for Mike. If she did, both of the judges with the first version of the dessert must have voted for Richard. Or at least one of them did, and Tom's vote carries enough weight to break a tie.
