Well, there is PF Chang's (which I've never been to) but I think I see what you're saying.

We have a few specialty Chinese restaurants and bistros here (Mao's Kitchen is a fave), but I think the place Chinese cuisine has in America has a lot to do with people's expectations. I think when people want Chinese food, they have certain expectations of how it's going to be served/presented and priced (namely dirt cheap, and on the lower end, unfortunately, of what people consider great cuisine).
