I rooted my G2 the day I got it so I could get rid of all the crap and get more control over where apps are installed and what my phone looks and acts like. With root you can speed up your processor, install new ROM's which will change the look of your phone and the way it performs. Stock is basic, rooting will give you full control of your phone and the ability to really tweak it.
