aiite.. so...

had an irish red 5 gallon batch in primary (6.5 gallon carboy). pitched 11.5g of Safale US-05 dry yeast. bubbled away nicely. after 9 days, i split the batch into two smaller secondary buckets. in one, just the irish red to clear up for bottling, in the other, 1 pound of raw honey and burbon soaked oak chips.

currently there's no activity in the honey bucket (no hydrometer readings, but no airlock activity), but there was a large air space. it's been about 4 days. should i repitch a heartier yeast like champagne yeast, or just let it ride for a few more weeks and see if the yeast picks up?
