1) form your standard patty, put it in a ziplock bag, and submerge in 130 degree water bath for 30 min for medium rare all the way through
2) remove from hot bath and briefly submerge in liquid nitrogen
3) cook briefly in a deep fryer to get a nice brown crust to the exterior. the cold bath prevents the deep fryer from further cooking the inside.
