HDCP is encryption that is carried by digital signals over HDMI.

It's a way for the manufacturer to set a do-not-copy flag. HDMI is HDCP compliant while other methods of HD delivery, such as DVI and component are not. Used to be, you could plug a Blu-ray player into a VCR with component cables, hit record on the VCR and record the movie (called the "analog loophole"). But now they're making most Blu-ray players with only HDMI connectors for this express reason.
Some video cards on computers won't talk to some monitors through DVI if the monitor is not HDCP compliant.
