oh, and, it doesn't matter if it isn't the nice parchment brown of the original silpat. mine are like steel-grey, i've had them for years, and they

look brand new. i use them for everything. baking. roasting vegetables. anything you would bake on a sheet. i even put them on the rack below when i am cooking a pizza right on the wire rack above to catch drips.
