ST I need vegetable help.

My mother just sent me a (blurry) picture of what looks like a light-green-colored vegetable. She bought it at the farmer's market. She said the name was "something that sounded like a toyota." (Doubtlessly she was no wearing her hearing aids, she never does). Also she said the farmer told her "it's a potato like a vegetable that you can cut up and use in soup."

The farmer is Mexican, but I don't know that this means the vegetable is common in Mexico.

Any idea?
