yep, parsnips, carrots, kohlrabi, even beets, toss in olive oil and salt and pepper, roast for one hour. also,

acorn squash can be done easily in the microwave (cut in half, put cut side down in glass dish, add 1 inch water and wrap in saran. microwave 8 minutes.) scoop out and mash with butter and brown sugar. (you'll need 1/3 to 1/2 squash per person-ish, depending on the number of sides you have)
