Pretzels are NOT hard (unless..never mind).. it's just dough, raised once, rolled into dough snakes.

dropping into baking soda infused water is a MUST to get that awesome brown color. i also brush with an egg yolk wash for extra color and to get the salt to stick.

you only boil them for 30 seconds.. all that time is spent waiting for the dough to rise.
