So, like, you can't cook dishes a day early and then re-heat them, right? That would be bad?

sure, depending on the dish. I do a ton of chopping and prep a day or two in advance too.

You can pre-cook some things. Like veggies and pies and other desserts. I wouldn't cook the Turkey/stuffing or baked mac and cheese in advance.
