Look, I was vegan for almost a year, yet still I did not eat enough fresh fruits and veggies

no seriously.

a. bags of spring mix salad, servings for several days

b. you can make a soup out almost anything, boil it for a few minutes, then put half of it in a food processor or blender, tadah, soupy broth with chunks of veggies. I like to use chicken broth as a base. add a bag of frozen peas, sprig of mint, or a half dozen carrots and a garlic clove.

c. bean salad, make a bowl and keep in frig, keeps for a few days
