I've taken to buying the veggies that are precut for stir frys in the produce section - I know I pay more for them - but then they don't go bad on me.

usually they have a mix of peppers, onions, carrots, brocoli and cauliflower
I make stir fry with them sometimes - but often will use them in salads or in pasta dishes - or just steamed with lemon and pepper (not the peppers & onions - just the brocoli/cauliflower)
