i think once you are older than say, 18, those slightly different shades of meaning become irrelevant.

sure, there might be a jump in status the first time someone introduces you as their 'boyfriend' or 'girlfriend'. but to say "i'm dating this guy" or "i'm going out with this guy" or "i'm seeing this guy", it's all the same. it implies the beginning dating stage. it's all semantics.
