Okay, help me plan a meal for two tomorrow night...Got the entree nailed, but need help with sides.

The entree is apple-topped pork chops. Chops served with sauteed apple pieces to make like a thicker apple sauce & topped a dollop of rough seed mustard.
Ideally, I would do steamed broccoli and aspharagus, but I do not have a steamer and my mother's already hinted at getting me one for Christmas so I don't want to buy one just yet. Any suggestions for another preparation for them?
But I'm open to any suggestions regarding a side. Wanting to impress her....
