Logistically, Churches and clergy are very busy on those days.

In the Catholic Church, you can't have a funeral Mass on Good Friday of Holy Saturday since no Masses are celebrated during the period of the calendar year representing Jesus's death. I figure the Church avoids doing funerals on Holy days like Christmas and Sunday as well.
