did they pick the spice mix, or you? if they did, you can always add to it before cooking. you can also sear the outside before putting it in the oven

Yeah they picked it - it's the local deli up the road and she's brilliant with spices - I do have some fresh rosemary though - how come skip the high -- nm

it's either oven or stove for doing the outer sear of the meat before the main cooking time. it's all up to how you like to do things -- nm
