my experience (while in Mexico) was that over-eating caused more problems than just eating

The first few days we were there, we ate at really cheap places or from roadside stalls, and never had any problems
The last two nights we were there, we went out to some reasonably fancy restaurants. Three courses, a lot of eating. That was when we got sick
