I bought some Jerusalem artichokes today. never had them before but saw lots of food shows cooking with them. does anyone have a good recipe for them?

I googled them and have a decent idea of taste & use, but respect your opinions.
I got them at the GOOD farmers market which was set up for local chefs 2 years ago by Mario Batali & his partner for their restaurants here in town, which is only thursday mornings and at the far side of town. They are 5 times greater than the normal weekend one. I also bought some orange cauliflower, fresh garlic with a foot of stalk still on them and some fresh Pepperoni/onion pasta one of the restaurants makes & sells there.
