All of the good ones I can think of have cheese. How about pasta with garlic, oil, veggies and some sliced chicken?

If it's not for you I would suggest manicotti. It's my all time favorite and not difficult to make. Or possibly stuffed shells, easier to make than manicotti but not as tasty in my opinion.
