if you had to make breakfast two days in a row, one day for 16 people and the next day for 18 people. what the heck would you make and how much of it

i think day one will be a big plate of cheesy scrambled eggs, a breakfast casserole (bread, eggs, sausage type), a whack of toast (how much toast do that many people eat??), and maybe bacon.
day 2 i was thinking pancakes with a bunch of fresh fruit and maybe canadian bacon, but is that an insane amount of pancakes to try to make on a traditional stove?
the quantities of this are just impossible for me to figure out realistically.

I'd make a bunch of different quiches beforehand (they freeze well and can be thawed out the night before), a huge fruit salad
