It has nothing to do with the employee at the station, it's automatic and happens at hotels too.

Debit cards pre-authorize before the purchase, but it's unknown how much you will actually purchase, so the gas station has to put a request in for enough to cover the possible charges. It will take a couple of days for the actual amount to process through and the hold to be let go
Hotels do it to cover potential incidental charges. It's very common. I hate debit cards for this reason.
