I get that it happens in real time, and you're moving based at least partly on instinct and reflex, but once you've made the call, regardless of if the ball is actually fair or foul, you've made the call, and you stick with it.

I agree on both counts. Stick with the call you made, you can't change it. That's not how the game is played or works.
