The virgin sacrifice was optional as long as it came last. With Marty still alive, the virgin dying would be a Bad Thing as the Great Old Ones are sticklers for protocol.
I'm not sure why you think he died and was brought back to life. He claimed to have taken the redneck pain-worshipping zombie out with a trowel and we saw its remains. Perhaps that was a backboard discussion that I missed.
