I have 3 cats and it's a concern. What I've done is make sure there are no hiding places I can't get at easily.

For example, cats can't get under beds because access is blocked (flat storage bins). Closet doors are always closed and cats are never allowed to go in one. Their carriers are just inside a closet door by the back door. The key in herding cats is not to be excited or move fast. Steady, sure movement, then snatch up the cat and deposit in carrier. I have collapsible carriers and the end is always unzipped for easy shove-in-ability.
Even with this much planning, if something big happens quickly it will be difficult. My cats don't go outside. Only 1 has ever shown a desire to go out on his own, so I don't think opening a window would work for my cats unless flames were coming their way.
I just hope for the best and plan for the worst as best I can. Never mind the need for me to grab important items (wallet, phone, laptop, shoes, etc.)
