I built a house out of stone and brick. I had a similar setup as you for a while.

I destroyed everything and left a trap door to get in and out to do some mining and large beacon to find it from a distance.
I've build some farms and a large tower where I house my enchanting table and nether world portal.
I'm loving this game despite the lack of an actual goal or end.
