Dining area-I remember being aith a friend at this place he worked in hilton Head - Ricks I think? The kitchen was white tile and the floor slanted to a drain hole in the center and they power sprayed the surfaces after close - steamy hot water all went down the drain and it's heat dried itself - air dry - super sparkling clean & white.

Their food was awesome!

They made deep fried spinich with parm cheese sprinkled on it while hot from the flash fryer as an appetizer - it melted on your tongue!

- Yeah but, even open kitchen (usually a grill/saute line) has a back prep room where storage and preparations are done and where most of the issues are - zeitgeist Jun 3, 13:03
