If you want to get your hands dirty with larger deployments

You have 2 choices in my opinion. Either you work for a larger company or work for a consulting company. I'd say working in a smaller environment is going to hurt your ability to sell your IT skills eventually because although you think it's a wide focus, it's really limiting your growth.

I got my start in a consulting company and worked up to BA/Integrator, fantastic experience. In fact,it got me the Director position I just took. Never would have been given that position if I had worked in one smaller infrastructure though.

If your Director/Manager are good, they don't focus their people too tightly. And I'd say with 5 staff for 500 workstations you probably keep a good amount of projects internal.
