I would also be using diet when I decide to make it - I've wondered as well if it works with diet.

MmmMmmm just pulled the pork from the crock pot (been cooking for 12 hours in root beer, onions, and bell peppers), gonna shred it and drench it in

Some BBQ sauce...it's pulled pork sandwiches and homemade cheese fries for dinner! The pork is so tender and delicious.
