Some of the notification settings are set pretty deep into the Messaging and Gmail applications themselves. Keep digging.

Every time I want to change the notification sound for when my text or email comes in (I usually keep different sounds for each), it still always takes a minute or two of clicking around before I find it. Just keep hunting through all the 'settings' menus on the individual applications, not just the main phone ringtone/notification settings.
