I think the bucket as some sort of gel that freezes and keeps the bucket cold while the machine churns the ice cream mixture.

I usually prepare everything the night before that way the ice cream mixture is really cold and I'm sure the bucket is completely frozen. I also leave the paddle in the bucket in the freezer so that's cold as well.
