If a plant gets stressed it will try to seed sooner.

I sometimes back off the water to force my tomatoes to ripen. Lack of water or nutrients can force a plant to try and seed faster. Once your herb flowers it's whole taste changes for the worse. Try cutting any stems that look like they are trying to flower.
