an example - kosher restaurants / caterers are milk or meat.

we use two for catered lunch sandwisches - one is the meat deli and one is called "dairy treats" - so you get cheese sandwiches, etc etc.

you use completely different places depending on which you plan to serve. that way their in no cross contamination in the kitchen. We even remove platters of meat sandwiches before we bring in the coffee with cream afterwards at office lunches.
