Option 1.

Option 2 requires that he thinks Vikings excel at something. I don't think Ralph is that nuanced. I think he literally dreams of being a viking. Option 3 is possible and even probably given how strange it would be. If anything Ralph is strange and would think that instead of dreaming of being a viking he literally thinks he turns into a viking when he sleeps.

In fact...I've changed my mind...it's Option 3. Option 3.
