wish I could remember where in Colorado it was - but visiting my friend Scott - had a fritatta mexican style - it was awesome

for some reason out West when you have breakfast items that are Mexican - they serve it with whole beans - not mashed up...so the "frijoles" are whole pintos or whole black beans - or a mixture of both - and cooked tender but not mashed up. I really liked that.
