Preheat your oven to 325. Spray a baking pan with a cooking spray, lightly salt and pepper the cut side of the squash and put it cut side down in the pan. Bake 45 minutes. In the meantime, make your stuffing, put it in a pan, bake 30 minutes. When squash are done, scoop stuffing into empty squash cavity. Put stuffed squash back in baking dish (hint, cut a small slice off the bottom so they won't wobble) and broil for a couple of minutes until top of stuffing and squash start to brown.
Also, you can melt butter in a pan, sprinkle in brown sugar, cinnamon, nutmeg, and ground cloves, stir it up. Put up to 4 acorn squash halves, cut side down in dish, back at 325 for 45 minutes. Flip them over, baste with the syrup in the pan and broil. It almost tastes like a pumpkin pie, but with only 1/2 the calories (if that).
