In my opinion: because they approach it with old school knowledge and try to throw "waggle" controls into it.

They're trying to quickly capitalize on the phenomenon and don't approach it from the angle of combining story and unique control together first.

Tailoring the game *to the unique controls* is what works, not tailoring the game first, then trying to make the controls for it work differently (than with ps3 or 360 control schemes).
