It's just a reflection of what a recently freed slave might perceive as "fancy pants". Perhaps it was played up a bit for comedic value, but we are told a narrative where Schultz teaches Django a number of social - and gunfighting - skills. We see Django go from "uncivilized" and "untrained" to "civilized" and "trained" and this demonstrates his progression.
