I usually rest my lid right on top of the food. Get it as close to the size of the sides of the colander.

Keep as much steam in as you can. Get to a rolling boil then back it off so it's not bubbling so much the water is splashing the food. So about 6 or 5 on a typical electric stove. As long as you are getting a good amount of steam you are good.
