I learned some things about vodka/moonshine...potatoes are actually a lousy source of booze, only 16% vs 60 in wheat barley corn and worse...

it makes a gooey mess that is hard to separate out of the mash so they usually distill and burn it, (which is why the places that still use them charcoal filter, to get rid of that burnt taste)
the reason they used potatoes was that back then when you lived out in the middle of frozen siberia, it was a lot easier to get something to market with a few jugs on a mule than thousands of pounds of potatoes.
