I bought eggplant at a farmstand the other day. I've had eggplant a few times and didn't like it at all (usually eggplant parm), but these are

different kinds of eggplant (white and - one that is light purple and white) and I figured it wouldn't hurt to try again and find a different recipe. I have no idea what kind of recipe to try, though.

Does anyone here who likes eggplant have a good recipe they could share?
