there's more than one way, but this is the first thing to try:

1.Open App Store
2.Select the Updates tab
3.Tap on the icon of the app that is stuck
4.This should put you back on the screen with the app attempting to load. Tap on the icon. You’ll see a message ‘Unable to Download Item’ and that the app cannot be downloaded. Please try again later.
5.Press Done
