the simple but nice way, put some 4x4 tiles....get a book at lowes. rent or buy a tile saw if you have a lot of corners or odd pieces to cut, or if

just a couple to do, have the random clerk wandering around lowes do it for you for a couple bucks for several cuts.
if you buy one, get it used and then resell it when done.
OR
go to a stone yard, pick out some nice granite. I went to a builder's liquidation warehouse and picked from the odds and ends available not only was this much cheaper but they referred me to some local guy who was much cheaper, he came out, measured, told us we needed one piece this long and another not so long so its ok if it had a broken corner on the end. we bought, he picked it up and cut it, had someone install it. we gave him an extra $100 to install the new sink (not part of the deal) and we got some NICE granite with pretty pattern for half of what lowes wanted just for the fake correlle that vaguely looked like granite. $1,300 total for two counters and back splash of same stone.
