If we could identify certain colors which we know are definite, such as the red in the Coca-Cola sign in the gas station picture, then I think we should be able to run algorithms that translate shades of grey into corresponding true color.

no, there are a lot of colors with the same gray tone rendering but distinct different color hue, terra cotta against blue sky is a famous one

also the kind of film effects translation of gray scale, IE: orthopan or panchromatic
