they make am cheese by blending cheddar cheese with 'milk fat solids' and that's what gives it that nice meltiness on a burger or sauce

milk fat solids are the fat oils that they separate out of skim milk that is 100% fat (butter is only 50-50)
I don't think cheddar would melt appropriately as is, usually when making a sauce you'd use some cream/halfnhalf or butter ....
but hey if you can get them to slice it that thin then it's worth the 2 bucks more
