Wait so you're only going to Magic Kingdom, and not the other 3 parks? (some suggestions)

MOST DEFINITELY number one on your list for Bub and I'm not being biased in the least is Buzz Lightyear Space Ranger Spin - that's gotta be the coolest thing for a 6.5 year old to ride.
Also its still there and its alot of fun - The Tomorrowland Speedway.
Astro Orbiter and Dumbo is essentially the same ride that spins around, but Bub has the power to make the ride go higher and lower with the button in the car, so that's probably cool.
Everything in Toon Town would be neat (which they've now renamed as part of new Fantasyland) - especially Barnstormer. It's like the kiddie version of a roller coaster and you can basically see how the ride goes around so you can judge for yourself if you want to take Bub on it.
Basically everything in Fantasyland.
If he likes that, perhaps Big Thunder Mountain Railroad would be cool for him too, although there are some dips there that feel like your head's about to be chopped off.
Haunted Mansion's a definite. Such a cool ride for kids.
I'd suggest Splash Mountain but trust your gut on that, you can see the large drop so if Bub's ok with a big (somewhat) steep drop. then he'll love that.
As others suggested, definitely Pirates. Jungle Cruise is neat too but not much too it (although you gotta love the old timey animatronics)
For shows - you gotta do the Monsters Inc Laugh Floor - that's absolutely the best for kids and adults.
If you're planning on having dinner there - you can't go wrong with Liberty Tree Tavern.
Rides to avoid:
Space Mountain, the dips in there might be too intense.
Stitch's Great Escape - Yeah... definitely not. I don't know why they market that ride to kids, I've seen adults leave that ride while it was going on cuz they were scared.
