They've delayed for lightning for years, and it's a good call.

And in preseason, they'll cut games short because of it.
Unlike rain or snow, lightning is actually dangerous to the people in the stands. I was outside the stadium during Tibetan Freedom Festival when the guy was hit by lightning. It sounded like an explosion. So outside of how bad it would be for a crowded stadium to have lightning strike, you would also likely have some panic. Which would cause more injuries.
Lightning and tornadoes are the only weather-related things that delay NFL games, I think. And both are rarities, and worthy of delays.
