Who knows Ethiopian food? I just got "beef tibs" from a truck, which included beef chunks, tomato chunks, corn, and some sort of spongy crepe.

At first I saw a honeycomb pattern on one side of the crepe thing that made me think it was stomach lining, especially since it's grey - like, elephant skin grey. But then I touched it, and even though it's cold, it feels like it was baked or poured into a pan. It would certainly be the most consistent, dense, and flexible pancake I've ever encountered. Is there a name for the crepe thing?
