If you're booted up and insert the Install disc, you don't get the option. Installation starts, then "Insert Disc 2" then "Complete."

To give yourself the option, boot up the xbox with the install disc already in the tray and then use the System tab to install it to the harddrive, and then insert the Play disc to just start playing. (or install the Play disc to a USB for quieter play)
Since it sounds like you're already installing, I assume you should finish, then go back to the dashboard, find the installation files, delete the Disc 2 one, then start playing from the Play disc and you should be fine.
