yes - we're all pretty much small towns up here - bit the pedigree of the owner & Chef is for places up here that know better & maybe

It's that the owner & chef have both never been front of house themselves?
I'm going to sleep on this and ask someone tomorrow at dinner who may know them and is in restaurant themselves what they think.
